Cheddar Biscuit Chicken Cobbler
Ingredients:
- Rotisserie Chicken
- 1 small yellow onion
- 2 carrots
- 2 stalks of celery
- 1 cup of frozen peas
- 2 cups of chicken broth
- ½ cup heavy cream
- 1 tablespoon dried thyme
- Salt & pepper to taste
- 3 cloves of garlic
- 1/3 cup of all purpose flower
- 2 tablespoons of butter (or olive oil)
- ½ cup of shredded cheddar cheese
Directions:Â Â Â
- Preheat oven to 400F
- In a large oven-safe pan or skillet, heat your butter (or olive oil) over medium heat.
- Add onion, carrots, celery and cook until soft (5 minutes)
- Add garlic and cook until fragrant
- Add flower and spices, stir to coat.
- Add chicken broth, then add cream. Stir until sauce begins to thicken.
- Add your shredded chicken and frozen peas. Stir well.
- Remove from heat.
- In a separate bowl, mix Cheddar Bay Biscuit Mix, water, and cheddar cheese.
- Spoon the biscuit dough in medium sized clumps on top of the filling in the pan.
- Bake uncovered for 20 to 25 minutes until biscuits are golden brown.
- Brush the butter and season mixture (Included in Biscuit package) on top of the cooked biscuits.
- Serve immediately and enjoy!
